Jamaican Oxtail & Butter Beans Recipe


Oxtail & Butter Beans ingredients:


3.5 lbs oxtail

1 onion – chopped

2 stalks of scallion

5 cloves of garlic

1 habanero chili or scotch

bonnet pepper (no seeds)

6 stems of thyme

1 teaspoon Himalayan salt

1/2 teaspoon garlic salt

1 teaspoon herbs de province

1 teaspoon all season salt

1 teaspoon black pepper

3/4 all-purpose seasoning Trim off all the fat and combine the seasoning using both hands.

After the pot is hot put a small portion of oil in. Then carefully put the oxtail in (scrape all the fresh seasoning off the meat before you place them in the pot)

Allow the oxtail to brown on all sides, then put the fresh seasoning back on the oxtail adding a cup of water, let it simmer slowly. Check every 15 minutes and adding a cup of water when needed. Be sure to cook on low heat. After oxtail is tender (usually 2.5 hours) add a tin butter bean, let it simmer for another 15 minutes.
