Islandgirl’s Kitchen presents: Escovitch fish with festival and bammy

Ingredients:
Snapper
Salt
Pepper
Escovitch dressing
Onion
Scotch bonnet pepper
Carrot
Pimento

Festival
Two cups all purpose flour
1/2 cup cornmeal
1/4 sugar
2 teaspoon baking powder
3/4 cup water

Bammy
Milk (I used unsweetened almond milk)
Bammy.

Method
Dry fish thoroughly
Sprinkle salt & pepper to taste
Fry in very hot oil
Remove immediately from oil after fish is fried

Combine all ingredients for festival kneed with hands
Allow to rest, cover with towel

Bammy
Soak bammy in milk then fry.
